My parents have an abundance of Zucchini in their garden. Mom and I were trying to think of something other than Zucchini Nut Bread or Stir Fry type recipes that we could use it for. SO, when we were at their house the week after 4th of July mom helped everyone out.
She found 4 recipes for Zucchini all used in different ways. The last Saturday night we were there, supper was a meat, corn, and 4 Zucchini dishes. That is right, we made them all in one afternoon for one meal and made all the grown ups try every one of them and tell us what they thought.
Hopefully Mom, Dad, and Chris will comment with their thoughts since I can not remember exactly what everyone rated them but here are mine.
Stuffed Zucchini - I rated it a 2 out of 10 because of the strong tomato taste and it was a little dry. This may not have been the recipe's fault, though. It may have been the cook's. We may try it again.
Zucchini Macaroni Casserole - I rated this a 7 out of 10 I think. It was yummy and Hannah liked it. It made you feel like you were eating healthy mac and cheese! I did put a little too much cheese in it, so that might have been why I liked it so much! :-)
Baked Zucchini - I rated this a 5 out of 10 that night. However, I have tried this one again and I believe I would now rate it a 9 out of 10. That night we did not get it all the way cooked, I know now, and I think it was a little too much on the oregano.
Baked Zucchini Squares - I rated this a 9 out of 10. This was SO SO good. We had decided this one was the one we would skip if time did not allow us to make them all. I thought it looked the most unappetizing. I was so so wrong. I think we all thought this was the best. It is AWESOME!
Let me tell you - that was a fun supper! I hope you can use some of these wonderful recipes, if you are looking for something a little different for all the zucchini you are growing!

It was SO fun to have the zucchini marathon and judge the dishes! Wish we lived closer and could do that more often. I see you didn't tell all our cooking secrets (hehehe!!!)
Ratings for me:
Baked Zucchini = 9
Mac & Cheese Zucchini = 8.5
Stuffed Zucchini = 2 (I remember loving this when Gmom made it - I think we did something wrong-can't imagine.....)
Baked Zucchini = 2.5
I don't think these were my ratings that night but this is the way I remember the dishes....
One added note - I can vouch that the baked squares and the mac & cheese are good left over, too!
Til next time......happy cooking!
I've been reading your blog and have to say you have a delightful little family! I have enjoyed all the Sunday pictures. That is such a neat idea to keep up with how quickly the kids grow up.
Thank you for the recipes! I've had the same thing going on here, too many zucchini and not enough to do with them. I have made bread, sauted them with onions and a little butter, and made casseroles (squash casserole, but I substitute some zucchini for some of the squash). I can't wait to try these ideas.
We tried the zucchini squares last night and they were a big hit with Clark and I. Abbey didn't care for it much, but she is going through one of those "love it today, hate it tomorrow" phases so I'll try it again with her.
Stuffed Zucchini = 7
Mac & Cheese Zucchini = 9
Baked Zucchini = 7 the first time then a 9.5 when Mindy made it a week later!
Baked Zucchini Squares = 8
